Pasta Puttanesca

With an extremely fragrant sauce, this pasta puttanesca recipe is simply sublime. An absolute cinch to prepare, this recipe is sure to make it into your regular weekly rotation! Serves 2.



Ingredients

  • 200g LOKA Protein Pasta

  • 1/4 cup extra-virgin olive oil

  • 4 cloves garlic (smashed)

  • 4 anchovy fillets (chopped)

  • 800g diced tomatoes

  • 1/2 cup pitted Kalamata olives

  • 1/4 cup capers

  • 1/2 tsp red pepper flakes

  • Grated parmesan (to taste)



Directions

  1. In a large skillet over medium heat, heat oil. Add garlic and cook until fragrant, 1 minute. Add anchovy fillets and cook until fragrant, 1 minute more.


  1. Add diced tomatoes, pitted Kalamata olives, capers, and red pepper flakes. Bring to a boil, then reduce heat and let simmer, 15 minutes.


  1. Meanwhile, in a large pot of boiling salted water, cook LOKA pasta until al dente according to package directions. Drain and add sauce, tossing until coated. Sprinkle with Parmesan.
